| Arugula, Chicken, and Walnut Couscous |
A brief and delicious, clean, one-pot meal. This is my favorite 'go-to' meal on a hectic night. It's full of taste and virtually wholesome.
Ingredients :

- ¼ cup chopped walnuts
- 1 teaspoon olive oil
- ½ pound shiitake mushrooms, sliced
- 1 teaspoon olive oil
- ½ pound skinless, boneless chook breast halves, cubed
- three cloves garlic, thinly sliced
- 1 ¼ cups fat-free fowl broth
- three cups ( lightly packed) infant arugula, very coarsely chopped
- 1 (5.Nine ounce) bundle Parmesan-flavored couscous
- ¼ cup chopped clean basil
